DASSAI JUNMAI NIGORI ASAHI (ml)
This is a nigori that reflects Dassai's ever-present elegance. Being a High-End Junmai Daiginjo, this one is slightly less saturated with sake lees (the rice solids in the bottle) compared to other nigori. On the nose you'll find the faintest hint of muscat, but where this sake shines is its texture and flavor. Its light, fine grain texture accompanies bright and juicy balanced flavors, resulting in a slight sweetness.
TEARS OF DAWN DAIGINJO HIGASHIYAMA (ml)
Brewed in the same way with the same ingredients as Pearls of Simplicity but with a touch of distilled alcohol to open up aromatics and lighten the overall impact. Konteki means dew drops of the earth while Higashiyama (the brewery name) translates to eastern hill. Brewery workers have been known to start their days watching the sun rise over the mountains until the dew drops glisten as if they were the Tears of Dawn.
